“Umeshu” is a Japanese plum liqueur made by steeping ume fruits in alcohol and sugar.

Located in Ono City, Fukui Prefecture, Nanbu Sake Brewery has been brewing sake for approximately 120 years.

With the philosophy of “carefully overseeing what is within our reach,” Nanbu Sake Brewery, blessed with abundant spring water from the Kuzuryu River, engages in traditional yet innovative sake brewing.

Last year, we offered Hanagaki Umeshu “feel” as our young proprietress’s recommended sake. This pure rice sake, brewed with Fukui-grown rice and pristine water, is infused with ripe, fruity plums, “Benisashi” and “Kensaki.” This plum liqueur is then pressed using the brewery’s unique method, resulting in a rich, paste-like pulp and umami flavor – this is “Ume no Mi Shibori” (Plum Fruit Press).

This is a rare, almost mythical plum liqueur that is rarely available. Even at our shop, we can only offer a limited number. A glass with the potential to be a once-in-a-lifetime opportunity…
