Niwa no Uguisu Tokubetsu Junmai Natsuga Koi

Fukuoka Prefecture Yamaguchi Sake Brewery Co., Ltd.

原料米山田錦・夢一献

Founded in 1830, this is the oldest brewery in Fukuoka Prefecture.

Nearby is Kitano Tenmangu Shrine, which enshrines the god of learning, Sugawara no Michizane. The shrine was named after the Japanese bush warbler that often hides in the thickets and never makes an appearance, and which would fly into the courtyard every day.

『庭のうぐいす Niwa no Uguisu Tokubetsu Junmai Natsuga Koi』

Natsuga Koi is a summer-only sake made by pasteurizing new sake, then immediately sealing it and storing it until summer arrives.

This stops the action of enzymes, giving the sake a refreshing acidity and a sharp taste that will soothe you during the hot summer.
